2 cup rotisserie chicken, diced

0 3/4 cup fresh granny smith apple, sliced

0 1/3 cup dried english walnuts, halves

0 1/3 cup fresh scallions, tops & bulb

0 1/4 cup fresh celery, diced

2 Tbsp mayonnaise

1 1/2 tsp lemon juice

0 1/8 tsp table salt

5 drop liquid stevia sweetener

0 1/2 ea fresh butterhead lettuce, head, 5"
DIRECTIONS
- In a large bowl combine diced chicken, chopped apple, chopped walnuts, thinly sliced scallions, and diced celery until evenly distributed.
- In a small bowl, whisk together mayonnaise, lemon juice, salt and liquid stevia. Pour over chicken and fold until evenly coated. Taste and add salt and stevia to taste. Chill for 30 minutes to allow flavors to blend.
- Divide chicken salad evenly into each of 9 lettuce leaves, about 1/3 cup in each. Three filled lettuce cups is one serving.
