DIRECTIONS
These cookies are suitable for all phases except for the first two weeks of Induction due to the nuts.
- Preheat an oven to 325°F. Prepare a sheet pan with parchment paper or line with a silicone mat.
- In a small bowl cream the butter, pancake syrup and sucralose. Add the eggs one at a time, then the vanilla. Do not worry if the mixture looks runny, it will come together.
- In a small bowl combine the coconut flour, almond meal, baking powder and salt. Add to the wet ingredients. Mix thoroughly, cover with plastic wrap and refrigerate for 1-2 hours.
- Form the dough into 20 logs about 3 inches long and 1/2-inch around spacing them evenly on the baking sheet. Place an almond pointy side out at the tip of each finger and press gently then squeeze the fingers on the edges around the almond. Using a sharp knife make a shallow single slit for the top knuckle joint and then two half circles for the 2nd joint.
- Bake for 20-25 minutes until set and lightly browned on the edges. Allow to cool for 30 minutes to fully set. Use liquid food coloring if desired and a small paint brush to color the almonds if you prefer a more zombied look to the fingers. Or to make witches fingers with red painted nails!
