DIRECTIONS
- In a large skillet over medium heat, warm oil. Add onion, stirring frequently, until beginning to become translucent, about 2 minutes. Sprinkle chili powder, garlic powder, cumin and dried oregano over the onion, mixing and cooking until fragrant, about 30 seconds. Scrape onion to the sides of the pan and place ground beef in the middle, browning and breaking up until fully cooked and no longer pink, 8-10 minutes. Add diced green chili, stirring everything together until evenly combined.
- Stir in gently whisked eggs and continue to cook until firm, 3-5 minutes more. Remove from heat and transfer to a serving dish.
- Make a taco by spooning three tablespoons of the meat and egg mixture into a slice of turkey and fold up. Three turkey wrapped tacos as described is one serving.
Serve with sliced jalapenos and shredded cheese if desired. Just be sure to count the additional net carbs.
