DIRECTIONS
Use the Atkins recipe to make Pulled Chicken; use the entire recipe for this recipe. Also use the Atkins recipe to make Tomatillo Salsa or use 1 1/2 cups no-sugar-added salsa. If frozen, thaw in the refrigerator overnight before using. Optional: use the Atkins recipe to make Chili Spiced Tortilla Wraps instead of using the lettuce to wrap up the chicken (1 serving = 1.4g NC additional).- Heat oil in a large skillet over medium-high heat. Add the yellow onions and sauté until soft; about 4 minutes. Add the garlic and cook another minute until fragrant. Add the diced chipotle chili and sauce then stir in the pulled chicken and heat until chicken is thoroughly heated. Remove from heat and set aside.
- Chop avocado. Set aside. Cut lime into 6 segments. Set aside.
- Divide chicken mixture into the lettuce leaves, garnish with cilantro, avocado, 1/4 cup salsa and the juice from a wedge of lime. Optional: top with shredded Cheddar or Monterey Jack cheese or a dollop of sour cream (don't forget to add the additional g NC).
