INGREDIENTS

  • 0 1/2 Tbsp heavy whipping cream USDA
  • 1 large head fresh cauliflower USDA
  • 1 1/2 tbsp Za'atar spice blend, Spice Islands
  • 0 1/4 tsp fresh garlic FNDDS
  • 2 oz cream cheese USDA
  • 3 1/2 Tbsp olive oil USDA
  • 5 ea fresh dill weed, sprigs USDA
  • 0 1/2 tbsp Real Lemon lemon juice, 100% FNDDS
  • 4 oz feta cheese USDA
  • 0 1/2 tsp table salt USDA
  • 4 tsp fresh parsley, chopped USDA

DIRECTIONS

  1. Warm air fryer to 390°F.
  2. Wash cauliflower and cut into 1-inch thick florets. Place in a large bowl and toss with 2 tablespoons olive oil, 1 tablespoon za’atar spice blend, and salt. Place in a single layer in the air fryer, working in batches if needed, and cook for 8 minutes, flip and cook another 4-5 minutes, until cauliflower is crispy and browned. Remove to a platter and garnish with 1 tablespoon Italian parsley.
  3. While the cauliflower is cooking, in a food processor whip together softened cream cheese and heavy cream until well combined and fluffy. Add feta, dill, lemon juice, remaining ½ tablespoon za’atar, ½ tablespoon olive oil, 1 teaspoon chopped parsley and garlic until well combined, scraping down sides often. Scrape into a bowl and swirl remaining 1 tablespoon olive oil over the top and serve with the cauliflower. 
  4. One serving is about 48 grams cooked cauliflower with 2 rounded tablespoons herb whipped feta.

Cooking Tip

Using an air fryer for this recipe can bring some extra crisp to the cauliflower, but you can also roast the cauliflower in the oven, which might be a better choice if making a large quantity. Heat the oven to 400°F and spread the cauliflower into a single layer on a sheet pan. Roast for at least 45 minutes, flipping once about halfway through, until golden and tender.
