DIRECTIONS
- Chop apple. In a small skillet over medium heat, sauté apple with pinch cinnamon and pinch cloves stirring frequently until warm and beginning to soften, about 5 minutes. Set aside.
- In a mug, melt butter using a high-power microwave, about 1 ½ minutes. Add almond meal, flaxseed meal, baking powder, and pinch salt, using a fork to mix. Add caramel syrup and egg yolk, mixing until evenly combined. Fold in diced Atkins Caramel Apple Pie Bar pieces and sautéed apple pieces. Microwave on high power for 1 ½-2 minutes, until top springs back when tapped. One mug cake is one serving.
