1 bag Atkins Nacho Cheese Protein Chips

0 1/2 Tbsp canola oil USDA

3 lrg raw egg USDA

2 Tbsp red salsa FNDDS

1 oz queso fresco cheese FNDDS

3 ea turkey breakfast sausage link FNDDS
DIRECTIONS
- In a medium non-stick skillet over medium heat, warm canola oil. Add bell peppers, onions, and chopped precooked sausage, and sauté until onions are translucent, 3-4 minutes.
- In a small bowl, use a fork to whisk together eggs and salt. Pour into the skillet with the vegetables and start to scramble the eggs. Add half the bag of Atkins Nacho Cheese Protein Chips and fold the egg mixture together until eggs are fully scrambled, about 2 minutes more.
- Remove from heat and fold in remaining chips. Top with crumbled queso fresco, salsa, sliced avocado, sour cream, and cilantro and serve immediately.
