0 1/4 cup canned coconut milk USDA

0 2/3 oz fresh lemongrass USDA
DIRECTIONS
Ingredient note: You might also need yellow, red and blue food coloring, if desired.
- In a small saucepot, combine water and thinly sliced fresh lemongrass. Bring to a boil over high heat, stir in liquid allulose, and reduce heat to simmer. Cover and simmer over low heat for 15 minutes.
- Into a medium heat proof bowl, combine well mixed canned coconut milk, lime juice and zest. Pour in hot lemongrass mixture, stir until well combined, and cover with plastic wrap. Allow to steep at room temperature for 2 hours. Using a fine mesh strainer, strain liquid into a clean bowl or jar, discarding the solids. Refrigerate until fully cooled, another 60 minutes.
- Once the syrup has cooled, you can add color if desired. Split the syrup into thirds (about 1/3 cup each). Add 4 drops yellow food coloring to one, 5 drops red food coloring to another, and 5 drops blue food coloring to the last. Stir each until the color is evenly distributed.
- Use a shave ice machine, or a food processor, to prepare 8 cups of crushed ice. If using a food processor, we suggest using small ice cubes and working in batches. 12 cups ice cubes will yield about 8 cups crushed ice. Mound about 1 cup crushed ice for each serving. Top each cup of crushed ice with 2 teaspoons of each color syrup (or 2 tablespoons uncolored syrup). Store any unused syrup in the refrigerator for up to 5 days. One cup ice with 2 tablespoons syrup is one serving.
