INGREDIENTS

  • 0 1/4 tsp black pepper, ground USDA
  • 1 fl oz Real Lemon lemon juice, 100% FNDDS
  • 0 1/3 cup fresh green bell pepper, chopped USDA
  • 1 ea fresh garlic cloves USDA
  • 0 1/4 cup fresh chives USDA
  • 0 1/4 cup olive oil USDA
  • 0 1/2 cup fresh scallions, tops & bulb, chopped USDA
  • 1 cup fresh basil FNDDS
  • 0 1/2 tsp table salt USDA
  • 1 ea fresh avocado USDA
  • 0 3/4 ea fresh cucumber, with skin USDA
  • 2 cup fresh cabbage, shredded USDA

DIRECTIONS

  1. Into a medium bowl, combine finely chopped green cabbage, diced cucumber, thinly sliced scallions, and diced green bell pepper, tossing to mix.
  2. In a food processor, combine avocado, basil, chopped chives, olive oil, lemon juice, minced garlic, salt, and pepper. Process until smooth and well mixed, scraping down the sides if needed. Pour over the chopped vegetables.
  3. Toss vegetables and dressing until evenly coated. Serve immediately, or store covered in the refrigerator for up to 2 days. One cup dressed salad is one serving.

Instead of using all green vegetables, you could use red cabbage, and red bell pepper for a red and green color combo reminiscent of the holidays.
