  • 4 slice raw bacon, cured USDA

DIRECTIONS

Equipment note: either 4 paper straws or 4 skewers are needed for this recipe. We suggest metal skewers for even cooking.


  1. Heat oven to 375°F. Place a wire rack over a rimmed baking sheet.
  2. Wrap a slice of bacon around the straw or skewer, overlapping edges slightly and gently stretching to get as even coverage and as tight as possible, without creating holes in the bacon. Place on the wire rack and cook until starting to become crispy, about 25 minutes. Set aside to cool for 10 minutes.
  3. In the bottom of a double boiler, warm 1 inch of water to a simmer over high heat. Place broken up Atkins Endulge Crunchalicious Bar into the top of the double boiler and place over simmering water. (If using a heat tolerant bowl over a pot of water, be sure to keep the bottom of the bowl at least 1 inch above the water.) Melt the chocolate, stirring frequently, about 4 minutes. Once melted, coat two inches of one end of each bacon straw evenly with chocolate, place back on the wire rack, and refrigerate until the chocolate is hardened, about 10 minutes. Gently remove the bacon from the straw or skewer. One chocolate dipped bacon straw as described is one serving.

Cooking Tip

For best results, choose evenly wide bacon strips that are neither thick cut nor thinly sliced for this recipe. These straws are not fully liquid tight, but even if they don’t work perfectly as a straw, they are a fun garnish for your favorite savory or sweet drink, and the perfect treat to add to a charcuterie board.
