DIRECTIONS
Note: in addition to the olive oil, this recipe requires 1 bunch of well-washed fresh leafy herbs, such as basil, parsley or cilantro. Use herb oils to garnish vegetables, soups, meats or in salad dressings. Each serving is 1 Tbsp.
- Bring a large pot of salted water to a boil. Have a bowl of cold water ready. Add the herbs (stems and all) to the boiling water and leave until just softened and bright green, about 30 seconds. Drain and plunge into cold water to stop cooking. Drain again and pat dry with paper towels.
- Combine herbs and oil in a blender. Blend until smooth. Transfer to a glass jar, cover and refrigerate 8 hours or overnight.
- Strain oil through a fine-mesh sieve.
- Refrigerate oil in an airtight container for up to 1 week.
