DIRECTIONS
- Preheat oven to 375°F.
- Cut the cauliflower into smaller florets and drizzle with the olive oil. Roast on a baking sheet for 35-40 minutes, or until tender.
- When cauliflower has about 10 minutes left to roast, warm a large skillet over medium heat. Add the hot wing sauce and Sriracha to the pan and cook until bubbling and reduced to a paste, about 5 minutes. Remove from heat and stir in the butter and vinegar.
- When the cauliflower is done roasting, add it to the skillet with the sauce and toss to evenly coat all the cauliflower. Serve immediately with blue cheese sprinkled on top.
Cooking Tip
For added creaminess and to cool the heat, combine the blue cheese with a couple tablespoons of sour cream.
