3 tbsp Magic Baker zero sugar baking blend, Splenda
DIRECTIONS
Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.
- In a medium bowl, mash together ripe avocado, sweetener, vanilla extract, and lime juice until it reaches a thick icing texture. Slowly whisk in Atkins Creamy Vanilla Shake until evenly combined. Pour into empty CREAMi pint, cover and freeze for 24 hours.
- Remove frozen pint, and process using Ninja CREAMi on the lite ice cream setting, then follow up with a respin for the best texture. Serve right away, or freeze for up to 30 minutes before scooping. Two small scoops (one third of the pint), or one large scoop is one serving.
